Hello peeps ! Here is a blog entry that has absolutely nothing to do with yoga, meditation, sound healing etc...but salad dressing...by Florence Achery.

If you have been on one of my retreats then you will know that I take our meals very seriously.

Not seriously as in 'let's eat in silence and count the number of rice grains on our plate' kind of serious !

Au contraire, as we all sit around the communal table, breaking bread, meal times are the perfect opportunity to catch up on the day and our feelings. There is always so much laughter, sharing and debating. And this is what going on a retreat is all about. Bonding with strangers and feeling as if you have known them for a very long time.

What I take very seriously is the menu on offer and I make sure that my guests only enjoy

freshly prepared dishes.

There is always a salad available and I have been asked on - every - single - retreat about the dressing.

Ah the salad dressing !

Dressing is important as it can make or break a salad.

I always reply that I make my own dressing with the best ingredients I can find: Organic olive oil etc....and I have promised many times to share the recipe but never did.

And here it is, at long last.

Ingredients


There are only 4 ingredients needed.

Try and purchase organic whenever you can.


  • 3 tablespoons Olive oil - Extra virgin if you can

  • 2 teaspoons Apple cider vinegar

  • 1 teaspoon Light Soy sauce

  • 1/2 teaspoon Miso paste

Method


  1. Start by mixing the miso, apple cider vinegar and light soy sauce with a spoon or fork in a small bowl.

  2. Once the miso has dissolved, add the olive oil.

  3. Adjust to taste. If it needs more salt, add more light soy sauce. If it's too acidic, add more olive oil etc....Taste and see what works for your taste buds.

  4. As it keeps for days, I prepare my dressing in a bottle so I have enough for a few days !
